Each year Four Pillars takes local cool-climate Shiraz grapes and steeps them in Rare Dry Gin for eight weeks. The resulting Bloody Shiraz Gin is rich in colour and flavour, all naturally occurring from the grapes (with no added sugar). Inspired by their neighbours in Victoria's Yarra Valley, Four Pillars decided to combine their rare dry gin with some of the best shiraz grapes in Australia. The latest release has an incredibly vibrant ruby colour, which turns iridescent pink when mixed with tonic or soda. Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet, with long juniper and spice characters to finish.
